Happy Summer Solstice


Summer is Finally Here!!

On this beautiful Summer Solstice day I am sharing a favorite recipe that fits right in with summer foods. I love the fact that foods really can change your health and wellbeing.

Hippocrates has often been quoted.

Let food be your medicine and medicine be your food

And he was so right.

One of the sneaky, unhealthy foods that often slips into our diet is salad dressing. The bottle varieties are often filled with preservatives, sugar and many words that most of us can't pronounce.

By the way, that is a good guide for what to look for on the food container

So the recipe I am sharing today is for Lemon Basil Vinaigrette Dressing. It is jammed packed with natural medicines. Basil is anti-inflammatory, a good antioxidant, pain reliever, anti-stress agent and immune booster among other benefits. Lemons are just chock full of health benefits such as vitamins, minerals and immune boosting among many others. Add that all together with a good extra virgin olive oil for the anti-inflammatory (plus more) effect and you have powerful ally for your health! So get a little wild and crazy and enjoy this delicious topping to whatever food calls for it.

Lemon Basil Vinaigrette

Ingredients

¼ cup extra virgin olive oil

¼ cup fresh lemon juice

1 tablespoon finely chopped fresh basil (I use more)

1 tablespoon white vinegar

1 clove minced garlic

1 teaspoon local unprocessed honey (if desired)

½ tea fine grind sea salt

¼ teaspoon freshly ground pepper

Whisk together to blend and refrigerate for at least 2 hours to let the flavors mix. Use within 2 days for best results.

Makes ½ cup
